White Chicken Pizza

Ingredients

  • 1 (15-oz) pkg already rolled out bakery pizza dough
  • 1 cup shredded mozzarella cheese, divided
  • ¾ cup whole milk ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 Tbsp finely chopped fresh thyme, divided
  • ¼ tsp pepper
  • 2 cups shredded rotisserie chicken
  • Crushed red pepper

Instructions

  1. Preheat oven to 500°F. Roll out pizza dough into a 16-inch round on a greased baking sheet.
  2. Combine ¾ cup mozzarella, ricotta, Parmesan, oil, garlic, 2 tsp thyme, and pepper in a bowl. Spread cheese mixture on dough. Top with chicken; sprinkle with ¼ cup mozzarella.
  3. Bake 12 to 15 minutes or until crust is golden and cheese is melted. Sprinkle with 1 tsp thyme and, if desired, red pepper. Serve half, and reserve remaining half for another meal.

  • 1 (5-oz) pkg spring mix
  • 1 Honeycrisp apple
  • 3 Tbsp Champagne vinaigrette
  • 2 Tbsp sweetened dried cranberries

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
