Hash Brown Bowls

Seedless Grapes and Blueberry Muffins

Ingredients

  • 6 frozen hash brown patties
  • 1 (8-count) pkg fully cooked sausage patties
  • 12 large eggs
  • 2 Tbsp butter
  • 1 (8-oz) pkg shredded colby-Jack cheese
  • 1 (16-oz) container fresh salsa

Instructions

  1. Cook hash browns according to package directions; break up into large pieces, and divide among 6 shallow bowls.
  2. Cook sausage according to package directions; coarsely chop, and divide among bowls.
  3. Beat eggs in a large bowl. Melt butter in a large nonstick skillet over medium heat; add eggs, and cook without stirring until beginning to set on bottom.
  4. Season lightly with salt and pepper; cook, stirring constantly, until thickened and set. Divide among bowls, and sprinkle with cheese. Serve with salsa.



Side Dish Ingredients

  • 2 (6.5-oz) pkg blueberry muffin mix
  • 1½ lb seedless grapes

Side Dish Instructions

  1. Prepare muffin mix according to package directions.
  2. Serve muffins and grapes on the side.
