Chipotle-Honey Salmon Bowls

Ingredients

  • 2¼ lb salmon fillets
  • ½ cup fresh lime juice
  • 2 Tbsp olive oil
  • 1½ Tbsp honey
  • ¼ cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp ground chipotle chile pepper
  • ¼ tsp ground cumin
  • ¼ tsp crushed red pepper
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 avocados, diced
  • 2 tomatoes, diced
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 425°F. Place fish on a foil-lined rimmed baking sheet.
  2. Whisk together lime juice, oil, honey, cilantro, garlic, chipotle pepper, cumin, red pepper, salt, and black pepper. Brush half of lime juice mixture over fish.
  3. Bake 15 to 20 minutes or until fish flakes with a fork.
  4. Meanwhile, combine avocados, tomatoes, and cheese in a bowl; toss with remaining lime mixture. Serve salmon with avocado mixture over Cilantro-Lime Rice recipe.



Side Dish Ingredients

  • ¼ cup chopped fresh cilantro
  • 1 Tbsp lime zest
  • 3 cups chicken bone broth
  • ¼ tsp kosher salt
  • 1½ cups long grain brown rice

Side Dish Instructions

  1. Cook rice according to package directions substituting broth for water. Stir in cilantro, lime zest, and salt.
