Greek Beef Skewers
Tomato-Cucumber "Couscous" Salad
Ingredients
- 1 lemon
- 2 lb grass fed ground beef
- 1 large egg, lightly beaten
- ½ cup grated onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp ground cumin
- 1 tsp salt
- 1 tsp pepper
- ½ tsp crushed red pepper
Instructions
- Preheat oven to 400°F. Grate zest from lemon.
- Combine lemon zest and remaining ingredients. Shape into 18 oblong patties around wooden or metal skewers. Place skewers on a rack on a foil-lined rimmed baking sheet.
- Bake 20 to 25 minutes or until done. Immediately remove skewers from rack.
Side Dish Ingredients
- 1 lemon
- 1 English cucumber, quartered and thinly sliced
- 1 tsp salt
- ½ cup chopped fresh parsley
- 1 (10.2-oz) jar pitted kalamata olives, halved
- 3 Tbsp avocado oil
- 1 (12-oz) pkg cauliflower crumbles
- 2 pints multicolored cherry tomatoes, halved
- 1 tsp pepper
- ½ cup chopped fresh basil
- 2 cloves garlic, minced
- 2 Tbsp organic rice vinegar
Side Dish Instructions
- Grate zest and squeeze juice from lemon. Stir zest, juice, and remaining ingredients into cauliflower.
- Preheat oven to 400°F. Combine cauliflower, oil, garlic, salt, and pepper on a rimmed baking sheet; spread in a single layer. Bake 25 minutes or until browned. Cool 15 minutes.
