Greek Pasta Salad

Ingredients
- ½ lb boneless, skinless chicken thighs
- 1 tsp salt free Greek seasoning
- 2 tsp olive oil
- 4 oz tri color rotini pasta
- 4 cups baby spinach
- ⅔ cup grape tomatoes, halved
- 3 Tbsp olive oil vinaigrette
- ¼ cup pitted kalamata olives, sliced
- ¼ cup crumbled feta cheese
Instructions
- Sprinkle chicken with Greek seasoning. Cook chicken in hot oil in a nonstick skillet over medium heat 5 minutes per side or until done; chop.
- Meanwhile, cook pasta according to package directions; rinse under cold water to cool.
- Toss together cooked pasta, spinach, tomatoes, chicken, vinaigrette, olives, and cheese in a large bowl.
