Ingredients

  • ½ lb boneless, skinless chicken thighs
  • 1 tsp salt free Greek seasoning
  • 2 tsp olive oil
  • 4 oz tri color rotini pasta
  • 4 cups baby spinach
  • ⅔ cup grape tomatoes, halved
  • 3 Tbsp olive oil vinaigrette
  • ¼ cup pitted kalamata olives, sliced
  • ¼ cup crumbled feta cheese

Instructions

  1. Sprinkle chicken with Greek seasoning. Cook chicken in hot oil in a nonstick skillet over medium heat 5 minutes per side or until done; chop.
  2. Meanwhile, cook pasta according to package directions; rinse under cold water to cool.
  3. Toss together cooked pasta, spinach, tomatoes, chicken, vinaigrette, olives, and cheese in a large bowl.
