Creamy Ranch Shrimp Pasta

Simple Roasted Asparagus

Ingredients

  • 4 oz fettuccine
  • ½ lb peeled and deveined, large raw shrimp
  • 1 Tbsp olive oil
  • ⅓ cup heavy cream
  • ¼ cup less sodium chicken broth
  • 1 Tbsp Ranch dressing mix
  • 1 green onion, thinly sliced

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook shrimp in hot oil in a skillet over medium-high heat 2 minutes per side. Reduce heat to medium; add cream, broth, and dressing mix, and cook 5 minutes or until thickened. Stir in green onion. Serve mixture over pasta.

  • ¾ lb asparagus, trimmed
  • ½ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 12 to 15 minutes or until asparagus is tender and lightly charred.
