Ranch Pork and Potatoes

Ingredients

  • 1½ lb boneless pork chops
  • ¼ tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil
  • 1 (1-oz) envelope Ranch dressing mix
  • 1½ lb small red potatoes, halved

Instructions

  1. Preheat oven to 400°F. Arrange pork chops on two large greased rimmed baking sheets. Sprinkle pork with salt and pepper.
  2. Whisk together oil and dressing mix. Toss together potatoes and oil mixture. Arrange potatoes around pork. Brush any remaining dressing on pork.
  3. Bake 20 to 25 minutes or until pork chops are done and potatoes are tender.

  • 2 tsp garlic powder
  • 2 (12-oz) pkg frozen broccoli florets
  • ½ tsp pepper
  • ¼ tsp salt

Side Dish Instructions

  1. Steam broccoli according to package directions. Toss together broccoli, garlic powder, salt, and pepper.
