Baked Chicken Taquitos

Ingredients

  • 1 onion, diced
  • 2 Tbsp olive oil
  • 3 cups shredded rotisserie chicken
  • 1 (16-oz) jar salsa, divided
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 12 soft taco-size flour tortillas
  • 1 (8-oz) pkg shredded Mexican-blend cheese
  • 1 (8-oz) carton sour cream
  • 2 green onions, thinly sliced

Instructions

  1. Preheat oven to 400°F. Cook onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
  2. Reduce heat to medium; stir in chicken, 1 cup salsa, chili powder, and cumin; cook 6 to 8 minutes or until thickened.
  3. Spread chicken mixture down middle of each tortilla; sprinkle with cheese. Roll up tortillas, and place, seam sides down, on a large foil-lined baking sheet. Spray tortillas with cooking spray.
  4. Bake 10 minutes or until golden brown. Stir together sour cream and green onions. Serve taquitos with sour cream mixture and remaining salsa.
