Crock Pot Pork Roast and Vegetables
- 3-4 pound pork roast
- 2 tablespoons oil
- 6 potatoes (quartered)
- 2 cups baby carrots
- 1 onion (cut in chunks)
- 10 ounces cream of mushroom soup
- 1 envelope dry onion soup mix
- salt and pepper to taste
- In a large fry pan or skillet, brown sides of the pork roast in oil.
- Place roast in crockpot.
- Mix cream of mushroom soup and onion soup mix in a medium size bowl. Add vegetables and mix well.
- Pour mixture over roast in crock pot.
- Cook on high for 4 hours, or on low for 8 hours.
