Crock Pot Pork Roast and Vegetables

Ingredients

  • 3-4 pound pork roast
  • 2 tablespoons oil
  • 6 potatoes (quartered)
  • 2 cups baby carrots
  • 1 onion (cut in chunks)
  • 10 ounces cream of mushroom soup
  • 1 envelope dry onion soup mix
  • salt and pepper to taste

Instructions

  1. In a large fry pan or skillet, brown sides of the pork roast in oil.
  2. Place roast in crockpot.
  3. Mix cream of mushroom soup and onion soup mix in a medium size bowl. Add vegetables and mix well.
  4. Pour mixture over roast in crock pot.
  5. Cook on high for 4 hours, or on low for 8 hours.
