Spicy Potato Tot Bombs with Kickin' Sauce

Ingredients

  • 1 (30-oz) bag frozen potato tots, thawed
  • 1 (8-oz) pkg pepper Jack cheese slices, cut into ¼-inch strips the length of the tot
  • 1 (16-oz) pkg bacon
  • 1 cup packed brown sugar
  • 2 tsp pepper
  • 2 tsp smoked paprika
  • 1 cup mayonnaise
  • ¼ cup barbecue sauce
  • 2 Tbsp prepared horseradish

Instructions

  1. Preheat oven to 375°F. Place 1 slice cheese on each potato tot.
  2. Cut each piece of bacon in thirds, and wrap bacon around tot and cheese.
  3. Stir together brown sugar, pepper, and smoked paprika in a shallow dish. Roll tots in mixture.
  4. Place, seam sides down, on a lightly greased rack over a rimmed baking sheet. Bake 20 minutes or until bacon is browned and crisp.
  5. Meanwhile, stir together mayonnaise, barbecue sauce, and horseradish. Serve with tots, for dipping.
