Spicy Potato Tot Bombs with Kickin' Sauce

Ingredients
- 1 (30-oz) bag frozen potato tots, thawed
- 1 (8-oz) pkg pepper Jack cheese slices, cut into ¼-inch strips the length of the tot
- 1 (16-oz) pkg bacon
- 1 cup packed brown sugar
- 2 tsp pepper
- 2 tsp smoked paprika
- 1 cup mayonnaise
- ¼ cup barbecue sauce
- 2 Tbsp prepared horseradish
Instructions
- Preheat oven to 375°F. Place 1 slice cheese on each potato tot.
- Cut each piece of bacon in thirds, and wrap bacon around tot and cheese.
- Stir together brown sugar, pepper, and smoked paprika in a shallow dish. Roll tots in mixture.
- Place, seam sides down, on a lightly greased rack over a rimmed baking sheet. Bake 20 minutes or until bacon is browned and crisp.
- Meanwhile, stir together mayonnaise, barbecue sauce, and horseradish. Serve with tots, for dipping.
