Mushroom and Kale Stir-Fry with Beef

Ingredients

  • ½ cup low-sodium chicken broth
  • ⅓ cup low-sodium soy sauce
  • 3 Tbsp rice vinegar
  • 2 Tbsp cornstarch
  • 1 Tbsp grated ginger
  • ½ tsp pepper
  • 1 (16-oz) pkg sliced mushrooms
  • 1 (10-oz) pkg shredded carrots
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 bunch lacinato kale, chopped
  • Reserved 3 cups cooked shredded beef (from Shredded Texas Beef Tacos recipe)

Instructions

  1. Stir together broth, soy sauce, vinegar, cornstarch, ginger, and pepper in a bowl.
  2. Cook mushrooms, carrots, and garlic in hot oil in a large skillet over medium-high heat, stirring often, 6 minutes until vegetables are tender.
  3. Add kale and broth mixture; cook, stirring often, until kale wilts and sauce is thickened.
  4. Stir in beef, and cook until thoroughly heated.
