One Dish Dinner
Mushroom and Kale Stir-Fry with Beef

Ingredients
- ½ cup low-sodium chicken broth
- ⅓ cup low-sodium soy sauce
- 3 Tbsp rice vinegar
- 2 Tbsp cornstarch
- 1 Tbsp grated ginger
- ½ tsp pepper
- 1 (16-oz) pkg sliced mushrooms
- 1 (10-oz) pkg shredded carrots
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 bunch lacinato kale, chopped
- Reserved 3 cups cooked shredded beef (from Shredded Texas Beef Tacos recipe)
Instructions
- Stir together broth, soy sauce, vinegar, cornstarch, ginger, and pepper in a bowl.
- Cook mushrooms, carrots, and garlic in hot oil in a large skillet over medium-high heat, stirring often, 6 minutes until vegetables are tender.
- Add kale and broth mixture; cook, stirring often, until kale wilts and sauce is thickened.
- Stir in beef, and cook until thoroughly heated.
