Vegetable Tabbouleh with Hummus
Ingredients
- 2 cups Israeli couscous
- 1 lemon
- 1 (15-oz) can chickpeas, rinsed and drained
- 1 (6-oz) pkg crumbled feta cheese
- 1 English cucumber, chopped
- 3 tomatoes, chopped
- ¾ cup chopped fresh parsley
- 3 green onions, sliced
- 1 (17-oz) container plain hummus
Instructions
- Cook couscous according to package directions; rinse under cold water to cool, and drain. Grate zest and squeeze juice from lemon. Stir lemon zest and juice into couscous.
- Toss together couscous, chickpeas, cheese, cucumber, tomatoes, parsley, and onions in a large bowl.
- Divide hummus among 6 plates; top with tabbouleh.
