Vegetable Tabbouleh with Hummus

Ingredients

  • 2 cups Israeli couscous
  • 1 lemon
  • 1 (15-oz) can chickpeas, rinsed and drained
  • 1 (6-oz) pkg crumbled feta cheese
  • 1 English cucumber, chopped
  • 3 tomatoes, chopped
  • ¾ cup chopped fresh parsley
  • 3 green onions, sliced
  • 1 (17-oz) container plain hummus

Instructions

  1. Cook couscous according to package directions; rinse under cold water to cool, and drain. Grate zest and squeeze juice from lemon. Stir lemon zest and juice into couscous.
  2. Toss together couscous, chickpeas, cheese, cucumber, tomatoes, parsley, and onions in a large bowl.
  3. Divide hummus among 6 plates; top with tabbouleh.
