Truffle and Pancetta Mac and Cheese
Ingredients
- 2 (4-oz) pkg diced pancetta
- 1 Tbsp olive oil
- 2 (20-oz) pkg Bob Evans® Macaroni and Cheese
- 1½ cups shredded Gruyere cheese
- 1 Tbsp truffle oil
- 2 Tbsp butter
- ½ cup panko breadcrumbs
- 1 clove garlic, minced
Instructions
- Preheat oven to 350°F. Cook pancetta in hot olive oil in a large skillet over medium heat until crisp; drain on paper towels.
- Spoon macaroni and cheese into a large bowl. Add crispy pancetta, Gruyere cheese, and truffle oil, stirring until blended. Spoon mixture into a lightly greased 2-quart baking dish.
- Meanwhile, melt butter in a small bowl; add breadcrumbs and garlic. Toss until well coated. Sprinkle over macaroni and cheese.
- Bake 25 to 30 minutes or until hot and bubbly and breadcrumbs are golden brown.
