Fried Rice Vegetable Bowl

Ingredients
- 1½ cups long grain white rice
- 1 (12-oz) pkg broccoli florets
- 2 cups frozen peas and carrots, thawed
- 1 yellow bell pepper, diced
- 3 cloves garlic, minced
- ½ tsp ground ginger
- 2 Tbsp olive oil
- 2 green onions, sliced
- ¼ cup chopped fresh cilantro
- 3 Tbsp less sodium soy sauce
- 2 Tbsp natural rice vinegar
- 2 Tbsp dark sesame oil
- ¾ cup chopped roasted cashews or peanuts
Instructions
- Cook rice according to package directions. Halve broccoli florets if large.
- Cook broccoli, peas and carrots, bell pepper, garlic, and ginger in hot olive oil in a large skillet over medium-high heat 8 minutes or until broccoli is tender.
- Combine rice, broccoli mixture, onions, cilantro, soy sauce, vinegar, and sesame oil in a bowl. Sprinkle with nuts.
