Ingredients

  • 1½ cups long grain white rice
  • 1 (12-oz) pkg broccoli florets
  • 2 cups frozen peas and carrots, thawed
  • 1 yellow bell pepper, diced
  • 3 cloves garlic, minced
  • ½ tsp ground ginger
  • 2 Tbsp olive oil
  • 2 green onions, sliced
  • ¼ cup chopped fresh cilantro
  • 3 Tbsp less sodium soy sauce
  • 2 Tbsp natural rice vinegar
  • 2 Tbsp dark sesame oil
  • ¾ cup chopped roasted cashews or peanuts

Instructions

  1. Cook rice according to package directions. Halve broccoli florets if large.
  2. Cook broccoli, peas and carrots, bell pepper, garlic, and ginger in hot olive oil in a large skillet over medium-high heat 8 minutes or until broccoli is tender.
  3. Combine rice, broccoli mixture, onions, cilantro, soy sauce, vinegar, and sesame oil in a bowl. Sprinkle with nuts.
