Chicken with Zucchini and Summer Squash

Orzo with Spinach

Ingredients

  • ¼ cup butter, divided
  • 2 lb boneless, skinless chicken thighs
  • ½ tsp dried thyme (or use dried rosemary)
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 3 zucchini, sliced
  • 3 yellow squash, sliced
  • 4 cloves garlic, minced
  • Fresh basil leaves

Instructions

  1. Melt 2 Tbsp butter in a large skillet over medium-high heat. Sprinkle chicken with thyme and ¼ tsp each salt and pepper. Cook chicken, in batches, in melted butter 5 to 6 minutes per side or until done.
  2. Meanwhile, melt 2 Tbsp butter in a large skillet over medium-high heat. Add zucchini, squash, garlic, and ¼ tsp each salt and pepper. Sauté 8 to 10 minutes or until vegetables are browned and tender. Serve chicken and vegetables over Orzo with Spinach recipe. Garnish with basil.

  • 1 cup whole wheat orzo
  • 3 cloves garlic, minced
  • ½ Tbsp olive oil
  • 1 (5-oz) pkg baby spinach
  • ¼ cup freshly grated Parmesan cheese
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook orzo according to package directions.
  2. Meanwhile, sauté garlic in hot oil in a large nonstick skillet over medium heat 1 minute. Add spinach; cook 2 minutes or until wilted. Stir in orzo, cheese, salt, and pepper.
