Paleo Chocolate Chip Zucchini Bread

Ingredients

  • 1 cup grated zucchini
  • 3 large eggs
  • ¼ cup pure maple syrup
  • 1 banana, mashed
  • 1 Tbsp coconut oil, melted
  • 1½ cups almond flour
  • ¼ cup coconut flour
  • ½ cup cacao powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup paleo dark chocolate chips

Instructions

  1. Preheat oven to 350°F. Grease a 9- x 5-inch loaf pan. Squeeze moisture out of zucchini using paper towels.
  2. Beat eggs, syrup, banana, and oil at medium speed with an electric mixer until blended. Stir in zucchini.
  3. Beat in both flours, cacao powder, baking soda, salt, and cinnamon until blended. Fold in chocolate chips. Pour batter in prepared pan.
  4. Bake 35 to 40 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
