Paleo Chocolate Chip Zucchini Bread
- 1 cup grated zucchini
- 3 large eggs
- ¼ cup pure maple syrup
- 1 banana, mashed
- 1 Tbsp coconut oil, melted
- 1½ cups almond flour
- ¼ cup coconut flour
- ½ cup cacao powder
- 1½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup paleo dark chocolate chips
- Preheat oven to 350°F. Grease a 9- x 5-inch loaf pan. Squeeze moisture out of zucchini using paper towels.
- Beat eggs, syrup, banana, and oil at medium speed with an electric mixer until blended. Stir in zucchini.
- Beat in both flours, cacao powder, baking soda, salt, and cinnamon until blended. Fold in chocolate chips. Pour batter in prepared pan.
- Bake 35 to 40 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
