Crispy Pimiento Cheese Chicken
Pickle-Green Onion Slaw
Ingredients
- 1½ lb boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ¾ cup pimiento cheese
- 3 oz cream cheese
- 3 green onions, thinly sliced and divided
- 1 cup panko breadcrumbs
Instructions
- Preheat broiler. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until browned. Transfer chicken to a greased 13- x 9-inch baking dish.
- Combine pimiento cheese, cream cheese, and 2 sliced green onions.
- Spread pimiento cheese mixture over chicken; sprinkle with breadcrumbs. Broil 2 to 3 minutes or until breadcrumbs are toasted. Sprinkle with 1 sliced green onion.

- 1 (16-oz) pkg tricolor coleslaw
- ¾ tsp pepper
- ¾ tsp garlic powder
- 3 green onions, thinly sliced
- 1 tsp granulated sugar
- ½ cup mayonnaise
- ¾ tsp dried dill
- 3 Tbsp dill pickle juice
- ¾ cup sliced or chopped dill pickles
Side Dish Instructions
- Combine mayonnaise, pickle juice, sugar, garlic powder, dill, and pepper in a large bowl. Add coleslaw, pickles, and green onions; toss.
