Crispy Pimiento Cheese Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¾ cup pimiento cheese
  • 3 oz cream cheese
  • 3 green onions, thinly sliced and divided
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat broiler. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until browned. Transfer chicken to a greased 13- x 9-inch baking dish.
  2. Combine pimiento cheese, cream cheese, and 2 sliced green onions.
  3. Spread pimiento cheese mixture over chicken; sprinkle with breadcrumbs. Broil 2 to 3 minutes or until breadcrumbs are toasted. Sprinkle with 1 sliced green onion.

  • 1 (16-oz) pkg tricolor coleslaw
  • ¾ tsp pepper
  • ¾ tsp garlic powder
  • 3 green onions, thinly sliced
  • 1 tsp granulated sugar
  • ½ cup mayonnaise
  • ¾ tsp dried dill
  • 3 Tbsp dill pickle juice
  • ¾ cup sliced or chopped dill pickles

Side Dish Instructions

  1. Combine mayonnaise, pickle juice, sugar, garlic powder, dill, and pepper in a large bowl. Add coleslaw, pickles, and green onions; toss.
