Cashew Chicken

Brown Rice and Roasted Sesame Broccoli

Ingredients

  • ¼ cup cashews
  • ¾ lb boneless, skinless chicken breasts, cubed
  • ⅛ tsp pepper
  • 3 cloves garlic, minced
  • 1 Tbsp vegetable oil
  • ¼ cup hoisin sauce
  • 1½ Tbsp low-sodium soy sauce
  • ½ Tbsp sesame oil
  • 2 green onions, sliced

Instructions

  1. Toast nuts in a dry skillet over medium heat 2 to 4 minutes or until fragrant.
  2. Sprinkle chicken with pepper. Cook chicken and garlic in hot vegetable oil in a large skillet over medium-high heat 6 minutes or until browned.
  3. Add hoisin, soy sauce, and sesame oil to skillet, tossing to coat chicken. Cook until sauce is thoroughly heated and chicken is done. Sprinkle with onions and nuts.



Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable brown rice
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 2 cups broccoli florets
  • 1 Tbsp sesame oil
  • 2 Tbsp toasted sesame seeds

Side Dish Instructions

  1. Preheat oven to 450°F. Microwave rice according to package directions. Season with ⅛ tsp each salt and pepper.
  2. Toss broccoli with oil on a baking sheet. Roast 10 to 15 minutes or until browned. Sprinkle with sesame seeds.
