Roasted Broccoli and Bacon Bowls

Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 2 shallots, sliced
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cloves garlic, minced
  • 1 (12-oz) pkg bacon, chopped
  • 3 (3.5-oz) pouches boil in bag brown rice
  • 2 lemons
  • 1 (5-oz) pkg crumbled goat cheese

Instructions

  1. Preheat oven to 425°F. Toss together broccoli, shallots, oil, salt, pepper, and garlic. Spread broccoli mixture in a single layer on 2 large rimmed baking sheets. Sprinkle with bacon. Bake 20 to 25 minutes or until broccoli is tender and lightly browned.
  2. Meanwhile, cook rice according to package directions.
  3. Grate zest and squeeze juice from lemons. Toss together broccoli mixture, lemon zest, lemon juice, and cheese. Serve over rice.
