French Toast Bread Pudding

Ingredients

  • 1 cup Bob Evans® Liquid Egg Whites
  • 1 (6-count) pkg Thomas'® Buttermilk English Muffins, cubed
  • 1 (8-oz) block cream cheese, softened
  • 2 cups milk
  • 1 cup packed brown sugar
  • ¾ cup granulated sugar, divided
  • ¼ cup strawberry jam
  • 1 tsp ground cinnamon
  • 1 (16-oz) pkg strawberries, sliced
  • ½ (8-oz) carton frozen whipped topping, thawed

Instructions

  1. Whisk together cream cheese, milk, brown sugar, ½ cup granulated sugar, jam, liquid egg whites, and cinnamon in a large bowl. Add muffins; toss. Spoon mixture into a lightly greased 2½-quart baking dish. Refrigerate at least 8 hours or up to 2 days.
  2. Remove casserole from refrigerator, and let stand at room temperature 30 minutes. Preheat oven to 375°F.
  3. Bake, covered, 20 minutes. Uncover and bake 30 minutes longer or until center is set and bread is golden brown.
  4. Stir together strawberies and ¼ cup granulated sugar; let stand 15 minutes. Cut bread pudding into squares; spoon strawberry mixture over and dollop with whipped topping.
