French Toast Bread Pudding

Ingredients
- 1 cup Bob Evans® Liquid Egg Whites
- 1 (6-count) pkg Thomas'® Buttermilk English Muffins, cubed
- 1 (8-oz) block cream cheese, softened
- 2 cups milk
- 1 cup packed brown sugar
- ¾ cup granulated sugar, divided
- ¼ cup strawberry jam
- 1 tsp ground cinnamon
- 1 (16-oz) pkg strawberries, sliced
- ½ (8-oz) carton frozen whipped topping, thawed
Instructions
- Whisk together cream cheese, milk, brown sugar, ½ cup granulated sugar, jam, liquid egg whites, and cinnamon in a large bowl. Add muffins; toss. Spoon mixture into a lightly greased 2½-quart baking dish. Refrigerate at least 8 hours or up to 2 days.
- Remove casserole from refrigerator, and let stand at room temperature 30 minutes. Preheat oven to 375°F.
- Bake, covered, 20 minutes. Uncover and bake 30 minutes longer or until center is set and bread is golden brown.
- Stir together strawberies and ¼ cup granulated sugar; let stand 15 minutes. Cut bread pudding into squares; spoon strawberry mixture over and dollop with whipped topping.
