Oven-Baked Parmesan Shrimp

Ingredients

  • 1½ cups whole wheat panko breadcrumbs
  • ¾ cup freshly grated Parmesan cheese
  • 2 tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp cayenne pepper
  • ½ cup all-purpose flour 
  • 3 large eggs
  • 1½ lb peeled and deveined, large raw shrimp (or use frozen, thawed shrimp)

Instructions

  1. Preheat oven to 400°F. Combine breadcrumbs, cheese, garlic powder, salt, and cayenne in a shallow bowl. Place flour in a second bowl. Beat eggs lightly in a third bowl.
  2. Dip shrimp in flour, and then in egg mixture, letting excess drip off. Dredge shrimp in breadcrumb mixture, pressing to adhere. Place coated shrimp on a lightly greased foil-lined baking sheet. Coat shrimp with olive-oil cooking spray.
  3. Bake 12 to 15 minutes or until shrimp turn pink and are firm.



Side Dish Ingredients

  • 1 (12-oz) pkg bucatini pasta (or use your favorite pasta shape)
  • 1 cup marinara sauce
  • 1 (0.5-oz) pkg fresh basil, chopped
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Cook pasta according to package directions; drain and return to pot.
  2. Reduce heat to medium-low. Stir in marina sauce and basil; cook 2 to 3 minutes or until thoroughly heated.
  3. Cook green beans according to package directions.
