Creamy Parmesan and Spinach Orzo

Ingredients

  • 1 (16-oz) pkg orzo
  • 3 Tbsp minced garlic
  • 1 Tbsp olive oil
  • 6 oz cream cheese, cut into pieces
  • 1½ cups shredded Parmesan cheese, divided
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper
  • ½ tsp salt
  • ½ tsp black pepper
  • 3 cups spinach
  • 1 cup French fried onions, crushed

Instructions

  1. Cook orzo according to package directions, reserving 1½ cups pasta water.
  2. Meanwhile, cook garlic in hot oil in a large skillet over medium heat 1 minute or until fragrant. Stir in cream cheese, 1 cup Parmesan cheese, 1 cup pasta water, Italian seasoning, red pepper, salt, and black pepper until combined. Add spinach; cook until wilted.
  3. Stir in orzo, stirring to combine. Add in additional pasta water, if needed, to thin the sauce to desired consistency. Sprinkle with ½ cup Parmesan cheese and crushed fried onions.

  • 1 (10-oz) pkg arugula
  • 1 pint grape tomatoes, halved
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
