Tomato-Basil Tortellini Skillet

Ingredients
- 2 fresh plant based burger patties, crumbled
- ½ cup chopped onion
- 1 large clove garlic, minced
- 1½ tsp olive oil
- ½ (24-oz) jar tomato and basil marinara sauce
- 2 cups low sodium vegetable broth
- ½ (12-oz) pkg three cheese tortellini
- 1 Tbsp chopped fresh basil
- Freshly grated Parmesan cheese, optional
Instructions
- Cook patties, onion, and garlic in hot oil in a large skillet over medium heat until beef is browned and crumbly.
- Stir in marinara sauce, broth, and tortellini; bring to a boil, cover, reduce heat, and simmer 12 minutes or until tortellini is tender. Sprinkle with basil and, if desired, cheese.
