Tomato-Basil Tortellini Skillet

Ingredients

  • 2 fresh plant based burger patties, crumbled
  • ½ cup chopped onion
  • 1 large clove garlic, minced
  • 1½ tsp olive oil
  • ½ (24-oz) jar tomato and basil marinara sauce
  • 2 cups low sodium vegetable broth
  • ½ (12-oz) pkg three cheese tortellini
  • 1 Tbsp chopped fresh basil
  • Freshly grated Parmesan cheese, optional

Instructions

  1. Cook patties, onion, and garlic in hot oil in a large skillet over medium heat until beef is browned and crumbly.
  2. Stir in marinara sauce, broth, and tortellini; bring to a boil, cover, reduce heat, and simmer 12 minutes or until tortellini is tender. Sprinkle with basil and, if desired, cheese.
