Broccoli-Cheddar Frittata

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 1 Tbsp minced garlic
  • 1 Tbsp olive oil
  • 6 large eggs
  • ¼ cup reduced fat milk
  • 6 Tbsp shredded sharp Cheddar cheese
  • ¼ cup chopped roasted red pepper
  • ⅛ tsp salt
  • ⅛ tsp crushed red pepper

Instructions

  1. Preheat oven to 375°F. Cook broccoli according to package directions.
  2. Meanwhile, cook garlic in hot oil in a small ovenproof skillet until fragrant. Stir broccoli into garlic in skillet.
  3. Whisk together eggs, milk, cheese, roasted red pepper, salt, and crushed pepper in a bowl. Gradually pour over broccoli mixture in skillet.
  4. Transfer skillet to oven, and bake 20 minutes or until set and beginning to brown.



Side Dish Ingredients

  • ½ (28-oz) pkg frozen diced hash browns with onions and peppers
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • 2 Tbsp olive oil
  • ¼ tsp pepper

Side Dish Instructions

  1. Combine potatoes, cumin, and paprika. Cook potato mixture, covered, in hot oil in a large nonstick skillet over medium-high heat 17 minutes or until crispy and golden, turning every 3 to 4 minutes.
  2. Transfer potatoes to a paper towel-lined plate; sprinkle with pepper.
