Turkey Sausage-Stuffed Portobello Mushrooms
Easy Broccolini
Ingredients
- 2 portobello mushroom caps, cleaned
- 4 oz ground Italian turkey sausage
- ¼ cup chopped red bell pepper
- ¼ cup chopped onion
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 2 cups baby spinach
- ⅛ tsp pepper
- ¼ cup low sodium marinara sauce
- ¼ cup shredded mozzarella cheese
Instructions
- Preheat oven to 425°F. Remove gills from mushrooms using a small spoon.
- Cook sausage, bell pepper, onion, and garlic in hot oil in a nonstick skillet over medium-high heat 8 to 10 minutes or until sausage is browned and crumbly. Stir in spinach and pepper; cook 1 to 2 minutes or until wilted.
- Place mushrooms on a small foil-lined rimmed baking sheet. Spoon marinara sauce over mushrooms. Top with sausage mixture and cheese.
- Bake 10 to 12 minutes or until mushrooms are tender.

- ¾ lb Broccolini
- 3 Tbsp water
- ¼ tsp pepper
Side Dish Instructions
- Cook Broccolini with water, covered, in a microwave-safe dish 4 to 5 minutes or until tender. Drain, and toss with pepper.
