Turkey Sausage-Stuffed Portobello Mushrooms

Ingredients

  • 2 portobello mushroom caps, cleaned
  • 4 oz ground Italian turkey sausage
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 2 cups baby spinach
  • ⅛ tsp pepper
  • ¼ cup low sodium marinara sauce
  • ¼ cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 425°F. Remove gills from mushrooms using a small spoon.
  2. Cook sausage, bell pepper, onion, and garlic in hot oil in a nonstick skillet over medium-high heat 8 to 10 minutes or until sausage is browned and crumbly. Stir in spinach and pepper; cook 1 to 2 minutes or until wilted.
  3. Place mushrooms on a small foil-lined rimmed baking sheet. Spoon marinara sauce over mushrooms. Top with sausage mixture and cheese.
  4. Bake 10 to 12 minutes or until mushrooms are tender.

  • ¾ lb Broccolini
  • 3 Tbsp water
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook Broccolini with water, covered, in a microwave-safe dish 4 to 5 minutes or until tender. Drain, and toss with pepper.
