Slow Cooker Turkey-Pumpkin Chili

Ingredients

  • 1½ lb ground turkey
  • 2 red bell peppers, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup water
  • 1 (15-oz) can pumpkin puree
  • 1 (14.5-oz) can petite-diced tomatoes
  • 1½ Tbsp chili powder
  • 2 tsp ground cumin

Instructions

  1. Cook turkey, bell peppers, onion, and garlic in a skillet over medium heat until turkey is browned and crumbly. Transfer to a 5- to 7-quart slow cooker. Stir in water and remaining ingredients.
  2. Cover and cook on LOW 8 hours. Season with salt and pepper to taste.



Side Dish Ingredients

  • 3 cucumbers, thinly sliced
  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp lime juice
  • 1½ Tbsp apple cider vinegar
  • 2 jalapeño peppers, seeded and minced (see Note)
  • 2 cloves garlic, minced
  • ½ tsp salt

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
