Beef Burrito Salad Bowls

Ingredients

  • 1½ lb ground beef (or use ground turkey)
  • 1 (8-oz) pkg chopped onion
  • 1 (1-oz) envelope fajita seasoning mix
  • ¼ cup water
  • ½ (16-oz) container refrigerated salsa
  • 2 (8.8-oz) pouches microwavable brown rice
  •  1 (15-oz) can pinto beans, drained and rinsed
  • 1 (8-oz pkg) shredded iceberg lettuce
  • 1 (8-oz) pkg shredded Mexican-blend cheese
  • 1 (13-oz) pkg tortilla chips

Instructions

  1. Cook beef and onion in a large nonstick skillet over medium-high heat until browned and crumbly. Drain, return to skillet, and add fajita seasoning and ¼ cup water. Simmer 1 to 2 minutes. Stir in salsa.
  2. Cook rice according to package directions. Toss together beans and rice; season with salt and pepper, if desired.
  3. Arrange lettuce, beef mixture, and rice and beans in each bowl. Top with cheese, chips, and, if desired, additional salsa and other favorite toppings.
