Chicken and Wild Rice Salad

Toasted Pita Wedges and Seedless Grapes

Ingredients

  • 3 (8.5-oz) pouches microwavable long grain and wild rice
  • 3 cups shredded rotisserie chicken
  • 1 (15-oz) can mandarin oranges, drained
  • 1 cup chopped celery
  • 1 cup chopped pecans
  • ¼ cup chopped fresh parsley
  • ½ cup lemon vinaigrette
  • 2 (6-oz) pkg butter lettuce

Instructions

  1. Heat rice according to package directions, and place in a large bowl. Add chicken, oranges, celery, pecans, parsley, and vinaigrette; toss.
  2. Serve over butter lettuce.



Side Dish Ingredients

  • 1 Tbsp olive oil
  • 1 tsp kosher salt
  • 1 lb seedless red or green grapes
  • 1 (6-count) pkg pita bread

Side Dish Instructions

  1. Preheat oven to 400°F. Cut pitas into 6 wedges each, and place on a baking sheet. Brush with oil, and sprinkle with salt.
  2. Serve grapes on each plate.
  3. Bake 10 minutes or until crisp.
