Chicken and Wild Rice Salad
Toasted Pita Wedges and Seedless Grapes
Ingredients
- 3 (8.5-oz) pouches microwavable long grain and wild rice
- 3 cups shredded rotisserie chicken
- 1 (15-oz) can mandarin oranges, drained
- 1 cup chopped celery
- 1 cup chopped pecans
- ¼ cup chopped fresh parsley
- ½ cup lemon vinaigrette
- 2 (6-oz) pkg butter lettuce
Instructions
- Heat rice according to package directions, and place in a large bowl. Add chicken, oranges, celery, pecans, parsley, and vinaigrette; toss.
- Serve over butter lettuce.
Side Dish Ingredients
- 1 Tbsp olive oil
- 1 tsp kosher salt
- 1 lb seedless red or green grapes
- 1 (6-count) pkg pita bread
Side Dish Instructions
- Preheat oven to 400°F. Cut pitas into 6 wedges each, and place on a baking sheet. Brush with oil, and sprinkle with salt.
- Serve grapes on each plate.
- Bake 10 minutes or until crisp.
