Barbecue Meatballs

Steamed Rice and Roasted Broccoli

Ingredients

  • 1 lb ground beef
  • ⅓ cup quick cooking oats
  • ½ Tbsp Montreal steak seasoning
  • 1 large egg, lightly beaten
  • ½ (18-oz) bottle barbecue sauce
  • ½ cup chicken broth

Instructions

  1. Preheat oven to 400°F. Combine beef, oats, seasoning, and egg in a large bowl. Shape mixture into 2-inch meatballs.
  2. Place meatballs on a lightly greased wire rack on a rimmed baking sheet; bake 20 minutes.
  3. Transfer meatballs to a Dutch oven; add barbecue sauce and broth. Bring to a boil, reduce heat, and simmer 5 minutes. Serve over rice.



Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable long grain white rice
  • 1 (12-oz) pkg broccoli florets
  • 1½ Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together broccoli and oil on a rimmed baking sheet. Bake 20 minutes or until browned and tender; season with salt and pepper, if desired.
  2. Heat rice according to package directions.
