Chicken, Corn, and Zucchini Skillet

Rolls with Orange-Honey Butter

Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into 2-inch pieces
  • 2 tsp smoked paprika
  • 3 Tbsp olive oil, divided
  • 2 zucchini, halved lengthwise and sliced
  • 1 (12-oz) pkg frozen fire roasted corn
  • 1 Tbsp minced garlic
  • 3 Tbsp butter
  • 1 lemon, zested and juiced

Instructions

  1. Sprinkle chicken with paprika; season with salt and pepper, if desired.
  2. Cook chicken in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat until browned and done. Remove from skillet and keep warm.
  3. Cook zucchini, corn, and garlic in 1 Tbsp hot oil in same skillet over medium-high heat until zucchini is tender. Return chicken and all accumulated juices to skillet. Stir in butter, lemon zest, and juice. Season with salt and pepper, if desired.



Side Dish Ingredients

  • 1 Tbsp honey
  • 1 tsp orange zest
  • ¼ cup butter, softened
  • 1 (13-oz) pkg frozen parker house style rolls

Side Dish Instructions

  1. Stir together butter, honey, and orange zest; serve with rolls.
  2. Bake rolls according to package directions.
