Fig-Goat Cheese Burgers

Warm Okra, Corn, and Bell Pepper Salad

Ingredients

  • 2 slices center cut bacon
  • ½ lb ground chicken
  • 3 Tbsp crumbled goat cheese
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp fig preserves
  • 2 hamburger buns (preferably whole wheat)
  • ⅓ cup arugula

Instructions

  1. Preheat grill to medium-high heat. Cook bacon in a skillet over medium-high heat 6 to 8 minutes or until crisp.
  2. Meanwhile, gently combine chicken, cheese,  garlic powder, salt, and pepper; shape into 2 patties.
  3. Grill patties, covered, 4 to 5 minutes per side or until no longer pink.
  4. Spread preserves on buns; serve burgers on buns with bacon and arugula.



Side Dish Ingredients

  • 1 ear corn, shucked
  • 1 small red bell pepper, halved and seeded
  • ¼ lb okra
  • 1 Tbsp olive oil
  • 1 green onion, chopped
  • 1 Tbsp red wine vinegar
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Toss vegetables with oil. Thread okra onto double skewers (two skewers side by side). Grill vegetables, covered, 5 to 6 minutes or until charred, turning occasionally.
  2. Cut kernels from cob into a bowl; discard cob. Remove okra from skewers. Coarsely chop bell pepper. Add okra, bell pepper, and onion to bowl.
  3. Drizzle vegetables with vinegar; sprinkle with salt and pepper.
