Apple and Cheddar Grilled Cheese

Sunflower Slaw and Fruit Cups

Ingredients

  • 1 Tbsp mayonnaise
  • 1 tsp organic Dijon mustard
  • 4 slices organic whole wheat sandwich bread
  • ⅔ cup shredded Cheddar cheese
  • 1 small red apple, cored and thinly sliced
  • 1 Tbsp butter

Instructions

  1. Combine mayonnaise and mustard in a small bowl; spread on bread slices.
  2. Sprinkle cheese over mayonnaise mixture on 2 bread slices. Arrange apple slices on cheese; top with 2 bread slices.
  3. Melt butter in a nonstick skillet over medium-high heat. Place sandwiches in skillet; cook 2 to 3 minutes per side or until golden brown and cheese melts.



Side Dish Ingredients

  • 2½ cups tricolor coleslaw
  • 3 Tbsp vegan Ranch dressing
  • 2 Tbsp roasted, lightly salted sunflower seeds
  • 2 (4-oz) no-sugar-added fruit cups

Side Dish Instructions

  1. Combine coleslaw, dressing, and seeds in a large bowl. Serve slaw mixture and fruit cups on each plate.
