Smoky Mayo Hummus Burgers

Ingredients

  • ¾ lb ground beef
  • ¼ cup roasted red pepper hummus
  • ⅓ cup panko breadcrumbs
  • 6 Tbsp chipotle mayonnaise
  • 3 hamburger buns
  • 1 cup baby spinach
  • 1 tomato, sliced

Instructions

  1. Gently mix beef, hummus, and breadcrumbs in a bowl using hands. Season generously with salt and pepper, if desired. Shape into 3 patties.
  2. Preheat a grill pan or a large nonstick skillet over medium heat. Cook burgers 5 minutes or until set and crust has formed on bottom. Flip burgers; cook 4 to 5 minutes or until no longer pink.
  3. Spread 2 Tbsp mayonnaise on cut sides of each bun. Serve burgers on buns with spinach and tomato. Top with additional hummus, if desired.



Side Dish Ingredients

  • 1 (13.5-oz) pkg frozen onion rings
  • ½ (16-oz) pkg strawberries

Side Dish Instructions

  1. Bake onion rings according to package directions.
  2. Serve onion rings and berries on each plate.
