Summer Tomato Chicken and Burrata

Ingredients
- 2 lb boneless, skinless chicken breasts
- 1½ Tbsp Montreal chicken seasoning
- 4 Tbsp olive oil, divided
- 4 large heirloom tomatoes
- 1 (8-oz) container burrata cheese, drained
- ⅓ cup pesto
- ⅓ cup roasted and salted pistachios
Instructions
- Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet; sprinkle with seasoning. Cook chicken in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Let stand 3 minutes; slice.
- Slice tomatoes; season with salt and pepper, if desired. Arrange tomato and chicken slices among 6 plates. Dollop with burrata .
- Stir 2 Tbsp olive oil into pesto for drizzling consistency. Drizzle pesto mixture on chicken, tomatoes, and cheese. Sprinkle with nuts.
