Garlic Roast Beef with Horseradish Sauce

Ingredients

  • 2 tsp dried thyme
  • 1½ tsp pepper, divided
  • ½ tsp salt
  • 1 (3-lb) eye of round roast
  • 5 cloves garlic, minced
  • 1¾ cups less sodium beef broth
  • 1 (8-oz) carton sour cream
  • 2 Tbsp prepared horseradish

Instructions

  1. Sprinkle thyme, 1 tsp pepper, and salt over roast. Place in a 5- to 7-quart slow cooker. Sprinkle with garlic, and pour broth into cooker.
  2. Cover and cook on LOW 8 to 10 hours or until beef is tender. Slice beef.
  3. Stir together sour cream, horseradish, and ½ tsp pepper. Serve with beef.



Side Dish Ingredients

  • ¾ tsp Italian seasoning
  • 1½ lb asparagus, trimmed
  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 2 Tbsp water

Side Dish Instructions

  1. Place asparagus in a microwave-safe dish; add 2 Tbsp water. Cover and microwave on HIGH 3 minutes or until crisp-tender. Drain; sprinkle with seasoning.
  2. Heat potatoes according to package directions.
