Garlic Roast Beef with Horseradish Sauce
Mashed Potatoes and Steamed Asparagus

Ingredients
- 2 tsp dried thyme
- 1½ tsp pepper, divided
- ½ tsp salt
- 1 (3-lb) eye of round roast
- 5 cloves garlic, minced
- 1¾ cups less sodium beef broth
- 1 (8-oz) carton sour cream
- 2 Tbsp prepared horseradish
Instructions
- Sprinkle thyme, 1 tsp pepper, and salt over roast. Place in a 5- to 7-quart slow cooker. Sprinkle with garlic, and pour broth into cooker.
- Cover and cook on LOW 8 to 10 hours or until beef is tender. Slice beef.
- Stir together sour cream, horseradish, and ½ tsp pepper. Serve with beef.
Side Dish Ingredients
- ¾ tsp Italian seasoning
- 1½ lb asparagus, trimmed
- 1 (32-oz) pkg refrigerated mashed potatoes
- 2 Tbsp water
Side Dish Instructions
- Place asparagus in a microwave-safe dish; add 2 Tbsp water. Cover and microwave on HIGH 3 minutes or until crisp-tender. Drain; sprinkle with seasoning.
- Heat potatoes according to package directions.
