Sausage and Potato Frittata

Ingredients

  • 1 (16-oz) pkg ground pork sausage
  • 3 cups frozen diced hash browns, thawed
  • 12 large eggs
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup shredded Italian-blend cheese

Instructions

  1. Preheat oven to 350°F. Cook sausage in a large ovenproof skillet over medium heat, stirring occasionally, until browned and crumbly. Stir in hash browns.
  2. Whisk together eggs, garlic powder, salt, and pepper in a bowl. Add to skillet, and cook, stirring, 2 minutes. Sprinkle with cheese. Bake 12 to 15 minutes or until center is set. Let stand 5 minutes before serving.



Side Dish Ingredients

  • 1 orange
  • 1 (5-oz) pkg spinach
  • ½ cup pomegranate seeds
  • ½ cup refrigerated lemon vinaigrette
  • ⅓ cup chopped walnuts

Side Dish Instructions

  1. Peel, section, and dice orange. Toss together orange and remaining ingredients in a bowl.
