Cheesy Baked Quesadillas

Ingredients

  • 1 lb ground beef
  • 1 (1-oz) envelope taco seasoning mix
  • ¼ cup water
  • 12 soft taco-size flour tortillas
  • 1 (16-oz) can refried beans
  • 1 (10-oz) can red enchilada sauce
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 (8-oz) carton sour cream
  • 1 (16-oz) container fresh salsa

Instructions

  1. Preheat oven to 450°F. Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Stir in taco seasoning and water; cook until thickened.
  2. Lightly grease 2 rimmed baking sheets. Arrange 3 tortillas on each baking sheet.
  3. Heat beans according to package directions. Spread beans on each tortilla; spread beef over beans. Top with remaining 6 tortillas. Bake 6 minutes.
  4. Spread enchilada sauce over tortillas; sprinkle with cheese. Bake 5 minutes or until cheese is melted; serve with sour cream and salsa.

  • 1 (10-oz) pkg tortilla chips

  1. Prepare salad kits according to package directions.
  2. Serve chips on each plate.
