Italian Chicken Sandwiches
Easy Cucumber Salad
Ingredients
- 1½ lb thin sliced boneless, skinless chicken breasts
- 1 Tbsp Italian seasoning
- ½ tsp kosher salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ¾ cup marinara sauce
- 2 tomatoes, thinly sliced
- 6 slices provolone cheese
- 6 whole grain brioche buns, split and toasted
- 2 (0.5-oz) pkg fresh basil, separated into leaves
Instructions
- Sprinkle chicken with Italian seasoning, salt, and pepper. Cook chicken, in batches if necessary, in hot oil in a large skillet 4 to 5 minutes per side or until done. Slice chicken, if desired.
- Meanwhile, heat marinara according to package directions. Spread marinara on bun bottoms. Top with chicken, tomatoes, and cheese. Cover with foil, and let stand 1 minute or until cheese is slightly melted. Top with basil, and cover with bun tops to assemble sandwiches.
Side Dish Ingredients
- ½ cup pitted kalamata olive, halved
- ½ cup thinly sliced red onion
- 2 English cucumbers, sliced
- ¼ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
