Italian Chicken Sandwiches

Easy Cucumber Salad

Ingredients

  • 1½ lb thin sliced boneless, skinless chicken breasts
  • 1 Tbsp Italian seasoning
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¾ cup marinara sauce
  • 2 tomatoes, thinly sliced
  • 6 slices provolone cheese
  • 6 whole grain brioche buns, split and toasted
  • 2 (0.5-oz) pkg fresh basil, separated into leaves

Instructions

  1. Sprinkle chicken with Italian seasoning, salt, and pepper. Cook chicken, in batches if necessary, in hot oil in a large skillet 4 to 5 minutes per side or until done. Slice chicken, if desired.
  2. Meanwhile, heat marinara according to package directions. Spread marinara on bun bottoms. Top with chicken, tomatoes, and cheese. Cover with foil, and let stand 1 minute or until cheese is slightly melted. Top with basil, and cover with bun tops to assemble sandwiches.



Side Dish Ingredients

  • ½ cup pitted kalamata olive, halved
  • ½ cup thinly sliced red onion
  • 2 English cucumbers, sliced
  • ¼ cup olive oil vinaigrette

Side Dish Instructions

  1.  Toss together all ingredients in a large bowl.
