Chicken Curry Casserole

Ingredients

  • 1½ cups long grain white rice
  • 1½ lb boneless, skinless chicken breasts, cubed
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 Tbsp olive oil
  • 1 (10.5-oz) can cream of chicken soup
  • 1 (10.5-oz) can cream of celery soup
  • 1 Tbsp curry powder
  • 1 (8-oz) carton sour cream
  • 1 cup crushed round buttery crackers

Instructions

  1. Preheat oven to 350°F. Cook rice according to package directions; spread in an even layer in a lightly greased 13- x 9-inch baking dish.
  2. Meanwhile, cook chicken, celery, and onion in hot oil in a large, deep skillet over medium-high heat until chicken is done. Stir in soups, curry powder, and sour cream.
  3. Spoon mixture over rice in dish; sprinkle with crushed crackers. Bake 30 minutes or until hot and bubbly.

  • 2 Tbsp olive oil
  • ½ tsp salt
  • 1 (12-oz) pkg frozen green beans
  • ½ tsp pepper
  • ¾ tsp garlic powder

Side Dish Instructions

  1. Cook beans according to package directions. Toss with oil, garlic powder, salt, and pepper.
