Chicken Curry Casserole
Steamed Green Beans
Ingredients
- 1½ cups long grain white rice
- 1½ lb boneless, skinless chicken breasts, cubed
- 1 cup chopped celery
- 1 cup chopped onion
- 2 Tbsp olive oil
- 1 (10.5-oz) can cream of chicken soup
- 1 (10.5-oz) can cream of celery soup
- 1 Tbsp curry powder
- 1 (8-oz) carton sour cream
- 1 cup crushed round buttery crackers
Instructions
- Preheat oven to 350°F. Cook rice according to package directions; spread in an even layer in a lightly greased 13- x 9-inch baking dish.
- Meanwhile, cook chicken, celery, and onion in hot oil in a large, deep skillet over medium-high heat until chicken is done. Stir in soups, curry powder, and sour cream.
- Spoon mixture over rice in dish; sprinkle with crushed crackers. Bake 30 minutes or until hot and bubbly.

- 2 Tbsp olive oil
- ½ tsp salt
- 1 (12-oz) pkg frozen green beans
- ½ tsp pepper
- ¾ tsp garlic powder
Side Dish Instructions
- Cook beans according to package directions. Toss with oil, garlic powder, salt, and pepper.
