Creamy Jerk Shrimp

Ingredients

  • 10 slices low-sodium bacon, chopped
  • 2 lb peeled and deveined, large raw shrimp
  • 2 Tbsp Caribbean Jerk seasoning
  • 2 Tbsp butter
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels, reserving 2 Tbsp drippings in skillet. Toss shrimp with Jerk seasoning. Melt butter with drippings in same skillet over medium-high heat.
  2. Add shrimp, in batches, and cook 2 to 3 minutes per side or until shrimp turn pink. Remove from skillet.
  3. Add broth to skillet; bring to a boil, reduce heat, and simmer 5 minutes or until reduced by half. Add cream, and simmer 5 minutes or until slightly thickened. Return shrimp to skillet, and cook 2 minutes. Sprinkle with cheese.



Side Dish Ingredients

  • 1 (32-oz) carton low-sodium chicken broth
  • 1 cup quick-cooking grits
  • 1 cup shredded mozzarella cheese
  • 3 Tbsp butter

Side Dish Instructions

  1. Bring broth to a boil in a medium saucepan over medium-high heat; whisk in grits. Reduce heat, and simmer, stirring occasionally, 5 to 7 minutes or until grits are tender. Stir in cheese and butter.
