Cook bacon in a large skillet over medium heat until crisp; drain on paper towels, reserving 2 Tbsp drippings in skillet. Toss shrimp with Jerk seasoning. Melt butter with drippings in same skillet over medium-high heat.
Add shrimp, in batches, and cook 2 to 3 minutes per side or until shrimp turn pink. Remove from skillet.
Add broth to skillet; bring to a boil, reduce heat, and simmer 5 minutes or until reduced by half. Add cream, and simmer 5 minutes or until slightly thickened. Return shrimp to skillet, and cook 2 minutes. Sprinkle with cheese.

1 cup quick-cooking grits
1 cup shredded mozzarella cheese
3 Tbsp butter
