Mediterranean Grouper

Lemony Dill Farro

Ingredients

  • ¾ lb grouper fillets
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper
  • 1 Tbsp plus 2 tsp olive oil, divided
  • ½ lemon
  • ⅔ cup grape tomatoes, halved
  • ¼ cup halved pitted kalamata olives
  • 1 Tbsp chopped fresh dill

Instructions

  1. Sprinkle fish with salt and pepper. Cook fish in 1 Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until fish flakes with a fork.
  2. Meanwhile, grate zest and squeeze juice from lemon half. Toss together lemon zest, lemon juice, tomatoes, olives, dill, and 3 Tbsp oil. Serve tomato mixture with fish.

  • ⅓ cup pearled farro
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Grate zest and squeeze juice from lemon half. Toss together lemon zest, lemon juice, farro, dill, oil, and salt in a bowl.
  2. Cook farro according to package directions.
