Crispy Chicken Taquitos
Ingredients
- 1 cup shredded rotisserie chicken
- ¼ cup guacamole, divided
- 4 soft taco size corn and flour blend tortillas
- ¼ cup shredded reduced fat colby Jack cheese
- ½ cup shredded iceberg lettuce
- 3 Tbsp reduced fat sour cream
- ¼ cup refrigerated salsa
Instructions
- Preheat oven to 450°F. Microwave chicken at HIGH 1 minute or until thoroughly heated.
- Spread 2 Tbsp guacamole down centers of tortillas; top with chicken and cheese. Roll up. Place taquitos on a rimmed baking sheet, seam sides down; spray with oil.
- Bake 10 minutes or until crisp. Top with lettuce, sour cream, remaining guacamole, and salsa.
