Crispy Chicken Taquitos

Ingredients

  • 1 cup shredded rotisserie chicken
  • ¼ cup guacamole, divided
  • 4 soft taco size corn and flour blend tortillas
  • ¼ cup shredded reduced fat colby Jack cheese
  • ½ cup shredded iceberg lettuce
  • 3 Tbsp reduced fat sour cream
  • ¼ cup refrigerated salsa

Instructions

  1. Preheat oven to 450°F. Microwave chicken at HIGH 1 minute or until thoroughly heated.
  2. Spread 2 Tbsp guacamole down centers of tortillas; top with chicken and cheese. Roll up. Place taquitos on a rimmed baking sheet, seam sides down; spray with oil.
  3. Bake 10 minutes or until crisp. Top with lettuce, sour cream, remaining guacamole, and salsa.
