Seven-Layer Burritos

Ingredients

  • 2 (8.8-oz) pouches Spanish rice
  • 6 burrito flour tortillas
  • 1 (16-oz) can refried beans
  • 1 (15-oz) can black beans, rinsed and drained
  • 2 cups shredded romaine lettuce
  • 1 cup pico de gallo, drained
  • 1 cup shredded Mexican blend cheese
  • ¾ cup guacamole

Instructions

  1. Cook rice according to package directions.
  2. Heat tortillas according to package directions. Spread refried beans on warm tortillas. Top with rice, black beans, lettuce, pico de gallo, cheese, and guacamole.
  3. Fold in both sides of each tortilla; roll up to completely enclose filling. Wrap burritos in parchment paper or foil, and refrigerate until ready to serve.
