Buffalo Chicken Quesadillas

Ingredients

  • 2 lb boneless, skinless chicken breasts, diced
  • 1½ tsp garlic powder
  • 5 Tbsp butter, divided
  • ½ cup buffalo wing sauce
  • 1¼ cups Ranch dressing, divided
  • ¾ cup sliced celery
  • 1 (8-oz) pkg shredded Mexican blend cheese
  • 6 burrito flour tortillas

Instructions

  1. Sprinkle chicken with garlic powder, and salt and pepper, if desired.
  2. Melt 2 Tbsp butter in a large nonstick skillet over medium-high heat. Add chicken; Cook 6 minutes, stirring occasionally, until browned and done.
  3. Spoon chicken into a bowl and stir in wing sauce, ¼ cup Ranch, celery, and cheese.
  4. Top one side of each tortilla with chicken mixture. Fold tortillas in half.
  5. Melt 1 Tbsp butter in a large nonstick skillet over medium heat; add 2 quesadillas to skillet. Cook 4 minutes per side or until golden brown; repeat twice with remaining butter and quesadillas. Serve with 1 cup Ranch dressing, for dipping.
