Sheet Pan Southwest Sausage and Potatoes

Ingredients

  • 1½ lb small red potatoes, halved
  • 3 Tbsp olive oil, divided
  • ¾ tsp ground cumin, divided
  • ½ tsp chili powder, divided
  • ½ tsp pepper, divided
  • 1 (14-oz) pkg smoked sausage, sliced
  • 1½ cups frozen corn kernels
  • 1 red bell pepper, sliced
  • ¾ cup sour cream
  • ½ cup chopped green onions

Instructions

  1. Preheat oven to 425°F. Toss together potatoes, 1 Tbsp oil, and ¼ tsp each cumin, chili powder, and pepper on a large rimmed baking sheet; spread in a single layer. Roast 10 minutes.
  2. Meanwhile, toss together sausage, corn, bell pepper, 2 Tbsp oil, ½ tsp cumin, and ¼ tsp each chili powder and pepper on a second large rimmed baking sheet; spread in a single layer.
  3. Add pan to oven; roast 15 minutes or until potatoes are browned and tender. Top each serving with sour cream and green onions.
