Ingredients
- 12 oz gluten free spaghetti
- 12 slices bacon, chopped
- 6 Roma tomatoes, chopped
- 6 oz cream cheese, cut into pieces
- ¾ cup gluten free chicken broth
- ¼ tsp salt
- ¼ tsp pepper
- 4 cups baby spinach
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Remove from pan with a slotted spoon, reserving 2 Tbsp drippings in skillet.
- Add tomatoes, and cook 3 minutes or until softened. Add cream cheese, broth, salt, and pepper; cook 3 minutes or until thickened.
- Add pasta and spinach to skillet, tossing to wilt spinach and coat pasta with sauce. Sprinkle with bacon.
