Ingredients

  • 12 oz gluten free spaghetti
  • 12 slices bacon, chopped
  • 6 Roma tomatoes, chopped
  • 6 oz cream cheese, cut into pieces
  • ¾ cup gluten free chicken broth
  • ¼ tsp salt
  • ¼ tsp pepper
  • 4 cups baby spinach

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Remove from pan with a slotted spoon, reserving 2 Tbsp drippings in skillet.
  3. Add tomatoes, and cook 3 minutes or until softened. Add cream cheese, broth, salt, and pepper; cook 3 minutes or until thickened.
  4. Add pasta and spinach to skillet, tossing to wilt spinach and coat pasta with sauce. Sprinkle with bacon.
