Instructions
Place eggs in a single layer in a large stainless steel saucepan. Add water to cover, and bring to a rolling boil. Remove from heat; let stand, covered, 15 minutes.
Drain and run cold water over eggs; peel and chop.
Combine eggs, desired amount of mayonnaise, pickle relish, mustard, salt, and pepper. Chill until ready to serve.
If desired, spoon egg salad onto lettuce leaves.
