Ingredients

  • 1 lb ground pork
  • 3 red bell peppers, chopped
  • 1 large onion, chopped
  • 2 cups frozen corn kernels
  • 3 cloves garlic, minced
  • 1 (15-oz) can black beans, rinsed and drained
  • ⅓ cup water
  • 2 Tbsp less sodium taco seasoning mix
  • 1½ cups shredded Mexican blend cheese

Instructions

  1. Cook pork in a large nonstick skillet over medium-high heat 5 to 6 minutes or until browned and crumbly.
  2. Meanwhile, sauté bell peppers and onion in another large skillet coated with cooking spray over medium-high heat 3 to 4 minutes. Add corn and garlic; cook 4 to 5 minutes.
  3. Add beans, water, and taco seasoning; cook 3 minutes or until thoroughly heated. Stir in pork. Top with cheese; cover and cook 2 minutes or until cheese melts.



Side Dish Ingredients

  • 6 cups chopped romaine lettuce
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together lettuce and vinaigrette in a large bowl.
