Shrimp with Rémoulade

Ingredients

  • 1½ lb peeled and deveined, large raw shrimp
  • 2 Tbsp olive oil
  • ½ cup mayonnaise
  • 1 Tbsp Dijon mustard
  • 1 Tbsp lemon juice
  • 1 Tbsp capers
  • 1 Tbsp minced garlic
  • ½ tsp smoked paprika

Instructions

  1. Cook shrimp in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until shrimp are done.
  2. Meanwhile, stir together mayonnaise and remaining ingredients. Serve sauce with shrimp.



Side Dish Ingredients

  • 3 (3.5-oz) pkg boil in bag brown rice
  • 2 (12-oz) pkg green beans
  • 1 tsp garlic powder, divided
  • 1 onion, chopped
  • 1 Tbsp olive oil
  • ½ (12-oz) pkg fully cooked andouille sausage, diced
  • 1 (14.5-oz) can petite diced tomatoes, drained
  • ¼ cup chopped fresh parsley

Side Dish Instructions

  1. Cook rice and green beans separately according to package directions. Toss beans with ½ tsp garlic powder.
  2. Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Add sausage; cook 3 minutes or until browned.
  3. Stir in rice, tomatoes, and ½ tsp garlic powder; cook until thoroughly heated. Sprinkle with parsley, if desired.
