Mushroom Pork Chops

Ingredients
- 2 lb boneless pork chops
- 3 Tbsp butter, divided
- 2 shallots, chopped
- 1 (8-oz) pkg sliced mushrooms
- 1 (10.5-oz) can cream of mushroom soup
- 1 cup chicken broth
- 1 Tbsp Dijon mustard
Instructions
- Season pork with salt and pepper, if desired.
- Melt 2 Tbsp butter in a large nonstick skillet over medium-high heat; add pork chops, and cook 5 minutes per side. Remove from skillet, and set aside.
- Melt 1 Tbsp butter in skillet over medium-high heat; add shallots and mushrooms. Cook, stirring, 5 minutes or until tender.
- Add soup and broth; bring to a boil, reduce heat, and simmer 5 minutes. Whisk in mustard and season with salt and pepper, if desired. Serve sauce over pork.

- 2 (8-oz) pkg thin green beans
- 1 (32-oz) pkg refrigerated mashed potatoes
Side Dish Instructions
- Meanwhile, heat potatoes according to package directions.
- Steam beans according to package directions; toss with butter. Season with salt and pepper, if desired.
