Ingredients

  • 2 lb boneless pork chops
  • 3 Tbsp butter, divided
  • 2 shallots, chopped
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (10.5-oz) can cream of mushroom soup
  • 1 cup chicken broth
  • 1 Tbsp Dijon mustard

Instructions

  1. Season pork with salt and pepper, if desired.
  2. Melt 2 Tbsp butter in a large nonstick skillet over medium-high heat; add pork chops, and cook 5 minutes per side. Remove from skillet, and set aside.
  3. Melt 1 Tbsp butter in skillet over medium-high heat; add shallots and mushrooms. Cook, stirring, 5 minutes or until tender.
  4. Add soup and broth; bring to a boil, reduce heat, and simmer 5 minutes. Whisk in mustard and season with salt and pepper, if desired. Serve sauce over pork.



Side Dish Ingredients

  • 3 Tbsp butter
  • 2 (8-oz) pkg thin green beans
  • 1 (32-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Meanwhile, heat potatoes according to package directions.
  2. Steam beans according to package directions; toss with butter. Season with salt and pepper, if desired.
